After an intense and rewarding month of January, February marks a full return to vineyard work for us at Cantina Sabaini, where the new vintage begins to take shape.
January brought us great excitement thanks to our participation in Amarone Opera Prima, where we officially presented our Amarone 2021 for the first time. It was an important milestone that gave us renewed motivation to face the coming months with enthusiasm and determination. As we already prepare for the next major event on our calendar, daily work among the rows continues without interruption.
From an agronomic point of view, February is one of the most delicate and crucial months of the year. It is mainly devoted to pruning and cane removal, two operations that have a direct impact on the balance of the vine and the quality of the future grapes. Through pruning, we select the best canes, those that will produce the new shoots, thus shaping the season’s yield from the very beginning. Each vine is observed individually, assessing its vigour and structure in order to intervene in the most appropriate way.
Cane removal, on the other hand, involves eliminating excess shoots and clearing the vine of non-productive parts. This process improves air circulation within the plant and allows it to concentrate its energy on the selected shoots, promoting more balanced growth and more uniform ripening of the grape clusters. It is a task that requires time, patience and experience, as every cut represents a decision that will influence the entire growing season.
Although winter is still present and the vines remain in vegetative rest, February already looks ahead to the future. Everything that is done now aims to prepare the plants for the arrival of spring, which in the coming month will bring the awakening of the vines and the beginning of a new vegetative cycle. The vineyard, seemingly still, is in fact at the centre of a quiet and constant effort that determines its balance and health.
This period therefore represents a fundamental phase of preparation: between organising upcoming commitments and carrying out daily vineyard work, we continue to operate with care and attention to guide our vines towards a new productive season, firmly convinced that the quality of every wine begins here, among the rows.
